For egg-free matzo balls, a lot of people
use Ener-G egg replacer mixed with half club soda and
half water. The club soda helps to make them very fluffy whether they are
traditional recipe or gluten-free.
Speaking of which, I’ve made Elena’s
recipe before, with eggs, and added a tablespoon of club soda to the mixture.
It makes a noticeable difference. I however cannot take credit for the addition
as I learned it from a friend of mine.
