I've been experimenting forever with gluten-free and vegan baking so I
have a pretty extensive collection of recipes going (hope to write a
cookbook soon).
Can you use flax seed? I'm not sure if it's kitniyot or not but I'll
do some research.. Grinding flax seed and adding water makes a very
good egg replacer. Better than the En-R-G brand by far. And going nut
free is easy.
Let me know if flax seed is ok with you and I'll go thru my recipes
and see what I can find that might make dessert a little more exciting.
I definitely can accommodate the egg-free/nut free. Just need to know
your Pesach traditions. Sephardic? Ashkenazi?
I did find this blog with a mish-mash of info on Kosher for Pesach for
Celiacs....some good resources and advice I didn't know about. Maybe
something new on there for you too. Just scroll down a few paragraphs.
