Going gluten free on Pesach is easy in the sense that my family does nisht-gebrokhts --- no matzah meal. Everything is made out of potato starch --- which by the way makes MUCH lighter and airier baked goods. The only issue that I've found that poses a problem with gluten and Pesach is that a lot of the brands don't label cross-contamination. And some of the brands that do label have still managed to cause a run for the Benedryl or a day-long vacation or more in the bathroom. My mom taught me how to make schnitzel that's gluten free for Pesach MUCH earlier than my diagnosis of Celiac Disease. We don't have any people with nut allergies, so we also do things like nut crusts and the like. I personally have found though that on Pesach, especially at the seder, it's sooooooooo late at night that NOBODY wants to eat anyway!If you want gluten free Pesach recipes of any kind, lemme know what you want and I'll post some. I've got a brownie recipe (nut, gluten and dairy free), angel food cake recipes, kugel recipes, roasted veggie dishes, kanedalach recipes, all sorts of recipes. My family's bigger problem on Pesach is with fruit allergies: my mom is allergic to grapes, I'm allergic to apples and bananas, my husband cannot have grapefruit, my little sister cannot have citrus, and both my mother-in-law and my father cannot have strawberries. On Pesach, A TON of things call for wine/raisins/wine based vinegar/balsamic vinegar/grape juice. In addition, charoses 'traditionally' is made with apples.
