Chabad should, as far as I know, accept the larger hechshers, such as OU, CRC, Circle K, Kof K, Star-K, KSA, etc.
Bob's Red Mill GF Flour (pareve, I think) is certified by Rabbinical Council of America, Miss Roben's (pareve, available from AllergyGrocer.com) and Pamela's Ultimate Pancake & Baking Mix (dairy) are both certified by OU I think, so they should be fine. Ener-G, Cherrybrook Kitchen, and some Gluten-Free Pantry mixes also have major hechshers.
The best advice I can give you is to ask the specific family what hechshers they prefer. This way everything will be kosher in both uses of the word ;-P
