I would suggest you go on a high protein, low fat, low carb diet. I have been on this type of diet (really lifestyle change) for five months now, lost 20 lbs and feel much healthier than I have in a long time.
My dietician recommended I eat five meals a day and protein at each meal. My key to success is logging my food. I use a free program at www.fitday.com.
1600 calories is about right for me, people differ there.
And lastly, vitamins - I take a multivitamin, calcium and fish oil every day.
