I've found freezing it in smaller containers makes for quicker and easier thawing in the fridge. The .5pt water bottles are great, but even up to a quart size is better than gallon jugs. It will generally sour quicker if it has been frozen because some of the live parts of the milk do not survive the freezing.

You can put it in a sink of cool water and it will begin to thaw and you can use it as it thaws. Be sure to pour some out before you freeze it and shake it...
