Does anyone out there have any words of wisdom on pickling beets? We just got a bunch of pick your own beets and want to pickle them. I have whey and also culture starter from body ecology I could use. We read the recipe in Nourishing Traditions (bake, peel, cutup, jar, etc). I liked the size of Dan's pickled beets (and flavor) so I thought I would only quarter them instead of cutting them up smaller.
Anyway, I just haven't done any pickling before and thought I'd seek some advice.
