Hi,
I just made this cake for my husbands birthday this past weekend and
it was amazing. I wanted to share it with you and your families. I
hope some of you will try it.

Maple Syrup Spice Cake

Ingredients and Directions:

1 c Maple syrup

1/2 c Coconut Oil

1/4 c Butter

3 Eggs

1 c Buttermilk

2 c Gluten free All Purpose flour (or your favorite flour blend)

1 ts Cinnamon

1/2 ts Nutmeg

1 pinch paprika

1/2 ts Salt

1 ts Baking soda

1 ts Baking powder

Cream syrup, coconut oil, buter, and eggs. Mix dry ingred with
buttermilk. Add to creamed mixture and beat until well blended. Bake
in 8x8 pan for 35 min or till done. Pan should be greased and floured.
Frost as desired.

Frosting:

3 - 8 oz. packages of Neufchatel creme cheese
3 t vanilla
2 T maple syrup
* Whisk all of the ingredients together until smooth. Keep chilled.
* The frosting must be very cold in order to work well in a pastry
bag. For frosting the entire cake, have the frosting just slightly
colder than room temperature.
