Monica was the first person in this area to offer NT cooking classes; so I did the drive to Montgomery County.  Currently, we are fortunate to have Cara’s cooking classes and this group as local resources.  

 

I attended Monica’s series for NT cooking basics.  Monica is enthusiastic and informative.  She covered the techniques and recipes in many of the NT categories.  Although she teaches from the book, she encourages creativity and adaptation to personal taste.  It was very helpful to taste the recipes as Sally Fallon intended.  Prior to taking Monica’s classes, I had experimented with recipes that sometimes resulted in frustration or uncertainty.  Some foods were so new ( i.e. fermented veggies and drinks, soaked grains) that I did not know what the “taste” was supposed to be.   We always had fun and would go away with inspiration fueled by information.  Monica also offered to field questions to Sally that she could not answer.
