Hi Rachel,
That's you, the UT student from Nashville, majoring in Spanish and the newest vegan, right? I sat across from you at the last VSET dinner and enjoyed chatting with you. I thought that the blue stockings and blue streaks in your hair was very cool! Infact, you have a striking resemblance to a favorite musical celebrity that I like... Natalie Merchant of the 10,000 Maniacs band and solo career! I've been told that I have a striking resemblance to a movie star, Emilio Estevez? I don't know...
Maybe not that much since I am growing a mullet out in the fashion of David Bowies in his Ziggy Stardust era! Anywho, if that's the way cool Rachel from the dinner, I'd love to sit with you and chat somemore at the Thanksgiving dinner tomorrow! And if it's not you, and another Rachel, you probably got a good laugh from reading this!
Cheers!!!
-Karl

Hi...I am late coming in on the discussion here, but haven't seen a few things mentioned in the e-mails.. There was a reference to the food co-op on Broadway, a wonderful source for all the items mentioned. (It is also local community owned, instead of big-box corporate...so another good reason to shop there). I wanted to point out that it is a co-op, but actually named Three Rivers Market (so that might help in looking it up in the phone book or when locating it across from Broadway Carpet. I'd like to mention tempeh as a good substitute for meat. As a fermented soy item, it is actually healthier for you than non-fermented ones and there are several that are meat like. Tempeh is sold in "bars" and can be cooked up in any dish that you used to like that had meat in it. It is a high-texture experience, as opposed to tofu. Tempeh strips (sometimes called Fakin' Bacon, usually in the refrigerator section near the tempeh bars) isn't really like bacon, but it tastes good and goes with lots of stuff and great on sandwiches because it is thin. And, for hiking, or snacks, or a "jerky" type experience, try Tempeh Strips that are packaged (usually near the check out) under the brand Primal Strips in different flavors ( I like teriyaki, and mesquite lime). They are slightly stringy and textured like meat.Rachel Swinney
