Fellow VSET members have provided excellent info on meat analogs and John addressed the dietary gout issues. So I'd like to contribute my vegan Thanksgiving recipes (attached Word doc.)
For many years I prepared the stuffed tofu dish (a version of Ron Pikarsky's recipe from his book 'Friendly Foods.) However, I came to realize that what I enjoyed most at holiday meals was the stuffing, the gravy, and my favorite vegetables - baked sweet potatoes and fresh cranberry relish. So then I simply prepared a delicious stuffing, mushroom gravy and all the rest (which meat-eaters love as well.)
The last couple of years I've simply prepared a really big mixed green salad with lots of my fav things like avocado and artichoke hearts; enjoy a big helping of that and then enjoy tasting small protions of stuffing, gravy, potatoes, etc. I don't suffer from being over-stuffed and I enjoy the holiday so much more.
I'm sharing this because, for me (and everyone is different) the analog meats simply didn't "cut" it. But for many folks these can satisfy a certain texture on one's plate. The analogs that have been mentioned are the most popular substitutes, and are certainly worth a try.

PS - Lots of green leafy vegetables and fresh cranberries are great for neutralizing/dissoving and cleansing your system of uric acids. Only use salad dressings with apple cider vinegar (preferrably organic unfiltered raw) or fresh lemon juice. Fresh vegetables and fruits will heal your body. Just avoid the animal fats - including butter and whipped cream.
