I'd be the guinea pig!!
Although when I accidentally ate gluten bread (my mom thought she
bought GF, but I discovered it shortly after), I actually did not
like the taste. It has a yeasty taste, if that makes sense. I could
tell right away that it tasted like "normal" bread, and asked to see
the package.
However, I do crave normal pizza and the lower cost and convenience
of normal pasta. Plus I was so skinny when I was eating gluten
(before I found out I had CD). Looking back, "skinny" was
malnourished and weak, and I know that was bad. It took about 2 yrs
of eating a GF diet to start absorbing my nutrients again and thats
when I gained weight (back to my normal size).
A pill would be nice. Maybe before we all die, just when the world
has finally begun to accept gluten free diets, they will come up with
a cure or a pill and we'll all be able to eat normal food again.

Did you know in England, thier health care system gives them like
$300 a year for GF food, plus they get food from thier doctors!!
