Hi all,
Couple of kombucha questions. First off, I'm using a bottle of Dave's
Kombucha as my starter rather than a scoby. Both times that I tried
making kombucha, I used less than a gallon of tea and waited at least
a month before trying the kombucha. Both times, it was bitter and lots
had evaporated -- I take it I waited too long?

HOWEVER, even after waiting so long, a mushroom has not formed. There
is sediment in the bottom and a small "floaty thing" - looks a little
bit like a piece of a jellyfish =). Is that ok, or is it supposed to
form a solid scoby?

Keep in mind, I'm not using a scoby as starter, just Dave's Kombucha.
