• 4 eggs
  • 3½ dl / 1½ cup cream
  • 250 gram / 1 cup provolone cheese*, grated
  • 60 grams / 2 ounces prosciutto ham, diced
  • 1 tablespoon black olives, minced
  • 1½ tablespoon jarred roasted red bell peppers, drained and chopped
  • Salt and pepper to taste

TO MAKE:

  1. Preheat the oven to 190º C / 375°F.
  2. Spray a pie plate or a quiche dish with nonstick spray.
  3. Spread the cheese in the bottom of the pie plate.
  4. Lightly beat the eggs. Whisk in the cream.
  5. Stir in the remaining ingredients and pour into the prepared pie plate.
  6. Bake at 170ºC / 350°F for 25-35 minutes or until a knife in the center comes out clean.

Makes 6 servings, 287 calories each. But only 3 grams of Carbohydrates per serving.
