RANI'S TOLL-FREE CHOCOLATE CHIP COOKIES
1 cup Splenda
1 egg
1 stick (1/2 cup) butter, softened
1/2 tsp baking powder
1/4 tsp salt, only if the butter is unsalted
1 tbsp vanilla
1 cup of protein powder (I used NRG vanilla, which is soy/whey blend)
1 tbsp brown Sweet n Low OR 3 tbsp brown Sugar Twin
2 tbsp SF maple syrup
1 1-oz square of unsweetened baking chocolate (shaved with a knife)
Pam
Cream the butter, add sweeteners and egg.
Add in all other ingredients, except chocolate, and mix well.
Shave the chocolate into shreds and chunks with a knife, stir into dough.
(Note: you can use Carbolite or other low-carb chocolate bars for this, it will be sweeter).
Spray PAM spots on a cookie sheet and drop in spoonfuls.
Baked at 325° for about 15 min. Makes 24 cookies.
