Chicken Scampi
This low carb chicken scampi recipe has only 1.9 carbs per serving and it tastes great. It's quick and easy to make. Give it a try.
2 lbs boneless skinless chicken cutlets, cut into strips
4 tbsp butter
1/2 onion, chopped
4 cloves garlic, chopped
1/4 cup ReaLemon lemon juice
1 tsp oregano
1 tsp basil
salt and pepper
1/4 cup Holland House White Cooking Wine
1 tsp parsley
1. Dice the garlic.
2. Melt the butter in a skillet over medium heat. Add onion and garlic and saute until the onion is clear.
3. Add the chicken and saute until fully cooked.
4. Add the oregano, basil, and salt and pepper to taste, simmer 2-3 minutes.
5. Using a slotted spoon, remove the chicken to a serving dish.
6. Add the lemon juice and white wine to the pan and simmer. Add sauce to the serving dish.
