Suz's LC Chocolate Chippers
makes about 4 doz
1 C butter, room temp
3/4 C brown maltitol crystals
3/4 C white maltitol crystals
1 tsp salt
1 tsp of vanilla (I used pure vanilla crystals, but you can use extract or
syrup)
2 eggs, room temp
1 & 1/2 C oat flour
3/4 C almond flour
6 oz SF chocolate chips (or chopped LC chocolate candy bars)
*optional 1 C chopped nuts
Preheat the oven to 325'. Cream the butter and maltitols together on medium
speed until well blended. Add the salt and the vanilla and blend well. Next
add the eggs, one at a time until will blended. Stop mixer and scrape down
the bowl so that everything is well incorporated. Add the oat and almond
flours. Mix in medium speed, stopping and scraping down the bowl one more
time
to
ensure everything is mixed will and there are no pockets of flour or egg.
Last
add the chocolate chips (and chopped nuts if you are using them) and mix
until
chips are throughout the batter. Drop on to parchment lined cookie sheet
about 2"-3" apart (cookies will spread considerably). Bake 9-11 minutes,
checking a minute or two before to make sure they are not overbaking. Middle
will
look 'slightly' underdone, as this will continue to bake and as it cools will
become chewy.
Total carb for entire recipe = 124 net carbs / 48 cookies @ 2 grams net each
