Here is a recipe that I've adapted from a traditional Mexican
dish Nopales with Pork Chops.  I've made it more soupy and used
hamburger cause I'm too lazy to cut up and brown pork chops.  Mom says
it tastes better than what she used to make. 
Per my recipe software, it says that there are about 10g of carb with
1 gram of fiber. 

                         Nopales & Hamburger Stew

Serving Size  : 1 pint (about 8 servings)    
Categories    : 5.1-10 grams carbs             One Dish Meal

  Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
  2             pounds  ground beef
  1              small  onion -- diced
  30            ounces  nopalitos
  14 1/2        ounces  Del Monte petite cut diced tomatoes w zesty
jalapenos
  8             ounces  tomato sauce
                        water
     1/2           cup  picante sauce

Put ground beef and onions in a 5 quart pan and add maybe 1 cup of
water.  Cook beef and onions and then drain to get rid of most of the
grease.

Return beef and onion to large pan and add remaining ingredients.  Add
enough water to create a stew like consistency.  Simmer to blend
flavors, maybe 1/2 hour or so.
