Salmon in Chipotle Butter
Make chipotle butter by blending half a stick of butter with one minced
chipotle chile (I buy chipotles in the can and freeze the extras in a
ziploc bag until needed). Cook the salmon fillets in this butter,
saving a little to garnish each fillet with. Sprinkle green pepitas
(Mexican pumpkin seeds) over each fillet as a garnish if you wish. A
salad made with lettuce, red and green peppers, Monterey Jack cheese,
and more pepitas is very good with this. If on Induction, leave the
pepitas off for now.
