Eggs - Convenience Breakfast

Amount  Measure       Ingredient

1/2            lb  sausage
1/2             c  shredded cheddar cheese
10                ea  egg
4                ozs  green chiles -- chopped

Cook the sausage - Drain and spread the sausage in an 8x11 baking
dish. (You may want to spray with Pam)
Beat eggs and cheese and chiles together.
Pour the egg mixture over the sausage.
Bake at 350-375 F until thoroughly set - 30 to 40 minutes. (The
firmer it is, the easier it is to eat in your hand.)
Let cool and cut.
Wrap each piece in saran wrap (or individual tupperwares) and
refrigerate.
Grab one in the AM and heat it up in the microwave. (About 1 minute)

Per Serving (excluding unknown items): 310 Calories; 26g Fat (75.4%
calories from fat); 16g Protein; 3g Carbohydrate; trace Dietary Fiber;
347mg Cholesterol; 404mg Sodium.  Exchanges: 2 1/2 Lean Meat; 0
Vegetable; 4 Fat.

Variations/additions: Ground beef instead of sausage. Or crumbled
bacon. Or already cooked shredded chicken. Or leftover roast.
Pepperoni? Defrosted broccoli or chopped asparagus spears instead of
green chiles. Added a couple shakes of dried red pepper. Or taco
seasoning. Pepper Jack instead of cheddar.
