Chocolate Chip Cookies ~ My Way
1/2 cup unsalted butter, room temperature
1/2 cup white maltitol
1/2 cup brown maltitol
1 large egg
1 teaspoons pure vanilla extract
3/4 cup wheat protein isolate
3/4 cup almond flour
3/8 cup oat flour
3/4 teaspoon corn starch
1 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped up sugar free milk chocolate
1/2 cup pecans or walnuts, chopped
Cream butter and "sugars" with mixer. Add egg and vanilla and beat
well.
Sift together dry ingredients, then add to creamed mixture. Mix well.
Add chocolate and nuts.
Form into balls and place on parchment lined cookie sheets.
Mine took about 15 minutes at 350 but time will vary according to
size and oven.

Store in tight container, with a slice of apple if you want to keep
them soft.
I dont have the carb count for this -- the chocolate was 2.5 net
carbs for 100 grams -- not sure what that makes 3/4 of a cup.
These flattened out a bit more than I'd like, but they are rather
tasty.
