Sherrie's Veal Stew
(serves 2)
1 lb. veal stew meat
1 cup water
1 cup vegetable broth
1 minced garlic clove
2 diced green onions
1 sliced stalk of celery
1/2 cup sliced mushrooms
Mrs. Dash to taste
granulated garlic to taste
I started by browning my veal with the seasonings (no flour or flour
substitutes). I seasoned the meat with Mrs. Dash and granulated garlic.
Once a little brown on most sides of the meat, I add the one cup of water to
the pan to get the flavors from the pan into the stew. Dump meat and
seasoned water into a small crockpot. Add to crockpot the vegetable (or
beef) broth, and vegetables. Cook on low setting for approx. 6 - 8 hours,
or until breaking apart easily with a fork.
If this is too brothy for you, you can add a low carb thickener to thicken
or reduce the water by 1/2 cup.
