1 SMALL OR TWO LARGE ONIONS, CUT INTO BITE-SIZE PIECES OR STRIPS
OIL FOR COOKING
BROWN SUGAR TWIN OR SWEET 'N' LOW
1-2 TBSP APPLE CIDER VINEGAR
2-4 TBSP LOW-CARB TOMATO SAUCE
HEAT OIL AND STIR-FRY THE PEPPERS AND ONIONS TILL LIMP AND SLIGHTLY BROWNED.
ADD TOMATO SAUCE, VINEGAR, AND SLICED SAUSAGE AND HEAT THROUGH.
WATER MAY BE ADDED FOR MORE SAUCE.
JUST BEFORE SERVING, STIR IN THE BROWN SWEETENER. 1 TSP OF SWEET N LOW *OR* 2 TSP SUGAR TWIN IS WHAT I USE.
GOOD SERVED OVER STEAMED, CHOPPED CAULIFLOWER "RICE."
Variation: INSTEAD OF THE ARTIFICIAL SWEETENER, YOU CAN USE ABOUT 1/3 CUP OF DIET SODA: COLA, GRAPE, OR DR PEPPER.
