Roman Lamb Stew

1 can Tomatoes, stewed, Muir Glen, Organic
1 clove garlic
1 medium onion
2 lbs lamb shank
5 tablespoons olive oil
1 1/4 cups white wine
1/2 teaspoon dried rosemary
1/4 teaspoon dried thyme
1 teaspoon salt
1 teaspoon pepper
3/4 cup grated Parmesan cheese
2 pounds Shiratake Noodles

Drain the tomatoes and chop roughly. Finely chop the garlic. Finely chop
the onion. Cut the meat into1-inch chunks.
Heat the oil in a saucepan. Add the meat and brown on all sides. Stir in
the wine, onion, tomatoes, garlic, rosemary, thyme, salt and pepper. Cover
and cook for about 20 minutes, until the meat is tender. Stir occasionally
and add more wine if the mixture becomes too dry. Meanwhile, drain the
shiratake noodles and warm in separate pot with little water. Drain well,
then arrange in a ring on a warmed serving dish. Sprinkle the noodles with
the cheese and spoon the lamb stew into the center. Garnish with fresh
rosemary sprigs and serve with a green salad.
