Delicious Asparagus Soup
Serves 6
1 pound asparagus
6 cups chicken stock or canned broth
1 shallot, minced
1 potato, grated
1 teaspoon dill
Salt and black pepper to taste
Sour cream for garnish
Grated lemon zest for garnish
Trim and peel asparagus, cut in 2 inch pieces. In a large saucepan bring stock to a simmer, add asparagus, shallot, potato, dill, salt and pepper. Bring the liquid to a boil, lower heat and simmer, stirring occasionally, for about 10-15 minutes, until asparagus is tender. In a food processor or blender, puree soup in batches until smooth. Taste and adjust seasoning, then return to saucepan. Heat until hot. Serve garnished with sour cream and lemon zest. Optional prep: Add 6 ounces cubed precooked ham to soup after pureeing as you reheat.
