Most people overindulge on Thanksgiving, but these mini pizzas offer a low-carb way to finish up the leftover turkey. Add some mixed fruit and it's a perfect lunch, even for kids. Or serve them as appetizers at a holiday get-together.
Ingredients:
4 8" flour tortillas
1/3 cup mayonnaise
¼ cup fresh basil
½ tsp dried thyme
1/8 tsp black pepper
2 tbs Dijon mustard
2 cup chopped turkey
1½ cup shredded mozzarella cheese
6 slices crispy bacon crumbled
2 tomatoes chopped
1¼ cup shredded Swiss cheese
¼ cup grated Parmesan cheese
Preparation:
Preheat oven to 425 degrees. In small bowl, combine mayonnaise, basil, thyme, pepper, and mustard and mix well. Stir in turkey, spread crust with this mixture. Top with remaining ingredients in order. Bake at 425 degrees for 10-15 minutes until crust is golden brown and cheese is melted. Cut into triangles. 4 servings
