Mock Applesauce
I tried making mashed chayote the way I make mashed cauliflower, but it was way too watery and sweet. So I decided to try it as mock applesauce instead. The result was amazing!
2 chayote squash
1 Tbsp butter
2-3 packets Splenda
1/2 tsp cinnamon or to taste
Cut the squash in half, remove the pit, and peel. Dice and place in a sauce pan. Turn heat to medium, then cover. They are pretty watery and will basically steam themselves. They should steam for 15 minutes or so. Once soft, remove from heat, add butter, and puree'. Allow to cool briefly, add Splenda and cinnamon.
Makes two servings. 11g carbs - 4 g fiber = 7 g net
