1/4 cup rice vinegar
1 teaspoon Splenda granular -- (1-2)
Slice cucumber into not paper thin slices.
Mix rice vinegar and Splenda to taste. Stir in cucumber, tossing to coat evenly.
Let sit to meld flavors while you make the rest of your dinner.
