Chili Relleno Pepper Casserole
 
preheat oven 350

2 Low carb tortillas ( optional)
Left over meat (pork, chicken, beef) shredded
1/4 to 1/2 salsa
1 pkg Mexican cheese
1 pkg taco seasoning ( i make my own)
1 to 2 chili relleno skinned and seeded then chopped (blister in oven on broil)
small container of sour cream
corn oil

In a skillet heat up the meat and sprinkle with taco seasoning till well coated then add the salsa heat.

in another bowl add the Mex cheese ( reserve a little for top) sour
cream and chopped relleno peppers.

in a casserole dish brush the casserole dish with corn oil. lay down 1
tortilla. then top with meat, then cheese mixture, then Tortilla
brush with corn oil on top sprinkle with cheese

Put in a 350 oven for 15-20 min. serve.
