- 4 eggs
- 3½ dl / 1½ cup cream
- 250 gram / 1 cup provolone cheese*, grated
- 60 grams / 2 ounces prosciutto ham, diced
- 1 tablespoon black olives, minced
- 1½ tablespoon jarred roasted red bell peppers, drained and chopped
- Salt and pepper to taste
TO MAKE:
- Preheat the oven to 190º C / 375°F.
- Spray a pie plate or a quiche dish with nonstick spray.
- Spread the cheese in the bottom of the pie plate.
- Lightly beat the eggs. Whisk in the cream.
- Stir in the remaining ingredients and pour into the prepared pie plate.
- Bake at 170ºC / 350°F for 25-35 minutes or until a knife in the center comes out clean.
Makes 6 servings, 287 calories each. But only 3 grams of Carbohydrates per serving.
