PERSIAN SHIRAZI SALAD

1 cucumber, diced
1 tomato, diced
1 onion, diced
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon dried mint
The diced cucumber, tomato and onion should be in equal proportions. Combine and add olive oil, lemon juice, and dried mint. Toss and serve. This goes well with a variety of foods.
