1 cup ricotta cheese
2 cups fresh spinach -- cooked, about 1 lb raw
1 cup mozzarella cheese -- shredded
4 eggs -- beaten
1/2 cup red pepper -- chopped fine
1/2 cup parmesan cheese -- grated or shredded
1 teaspoon oregano
Preheat oven to 350. Mix all ingredients until well blended.
Pour into greased 9 inch pie plate
Bake 40 minutes or until center is set
