YOU CAN USE ZUCCHINI, YELLOW SQUASH, EGGPLANT, OR OTHER VEGGIES (SO LONG AS YOU COUNT THEIR CARBS).
SLICE THE VEGGIES ON A SLANT, ABOUT 1/4" THICK. TOSS THEM IN A MIXTURE OF OLIVE (OR VEGGIE) OIL, WITH OREGANO, WHITE PEPPER , SALT BASIL........ANY HERBS THAT SUIT YOUR EXTRA-FANCY :)
HEAT YOUR GRILL VERY HOT, THEN LIE THE VEGGIES SINGLE LAYER ON THE FLOOR. OOOPS...ON THE GRILL. COOK ABOUT 4 MINUTES, THEN TURN THE VEGGIES ONCE, THEN COOK AN ADDITIONAL FEW MINUTES, UNTIL SOFT.
