Chocolate Chip Oatmeal Cookies

1 1/4c granular sugar substitute
3/4c unsalted butter
1 large egg
2Tbs sugar-free pancake syrup
1/2tsp vanilla extract
1 1/2c oatmeal
1/4c soy flour
1/4c whole wheat flour
1/4c whole grain pastry flour
1tsp baking powder
1/4tsp ground cinnamon
1/2tsp salt
1/2c sugar-free chocolate chips
1. Heat oven to 350F. In a large bowl, mix butter and sugar
substitute with a wooden spoon until well combined. Add egg, pancake
syrup, and vanilla; mix well.
2. In a bowl whisk together oatmeal, soy flour, whole wheat flour,
pastry flour, baking powder, cinnamon, and salt. Add dry ingredients
to butter mixture; mix well. Fold in chips.
3. Drop dough by tabelspoons onto ungreased baking sheets. Space
dough 1 1/2 inches apart and flatten with the palm of your hand.
4. Bake 14min or just until cookies begin to turn golden-brown.
Cool on sheets for 5min before transferring to cooling racks to cool
completely.
