You are correct in that a biopsy is inconclusive unless you have been
on a GLUTEN DIET for 3 months. This was confirmed yesterday by a
specialist I spoke with at UCLA.
In regards to your dairy sensitivity this is very common. Once the
gut becomes permeable (from celiac) then dairy, lactose, even perfumes
will make you sick. This was actually the case with me for many years.
After years of being gluten free, I tried milk products and thought it
was a miracle that I could suddenly tolerate them. I then read the
research that explained the mechanism of the villi returning to normal
and thus not being so permeable to lactose and dairy. When the small
intestine is damaged from celiac (while eating gluten containing foods)
then one can develop many food sensitivities. Keep in mind that
food sensitivities are NOT the same as gluten intolerant. For many
people, after at least 6 months of total gluten free diet, many of these
sensitivities begin to disappear. If you have celiac, you will ALWAYS
be intolerant to gluten. Many dieticians, health care providers have
tried to convince me that if I follow their particular program, I will
be able to re introduce gluten. RUN for the hills if someone tells you
that.
