Aloha Max,

I don't live anywhere near Hawaii yet but hubby has been transferred there as soon as the time is right. But Here are a couple of low carb treats I like and I'm a diabetic so they must not raise my sugars either. Give these a try.

Meringue Shell Lemon Pie (24-40 g carb total)
With Easy Lemon Curd Filling:

This is an excellent recipe and if you want something fun and fancy, pour the lemon curd in home-made (low-carb) meringue cups.
 
This is one method:
 
 Meringue Shell Lemon Pie (24-40 g carb total) 
 
Ingredients For Meringue Shell: 
 
    * 4 egg whites 
    * 1/4 teaspoon cream of tartar 
    * 5 Tablespoons Splendaź 
 
Ingredients For Filling: 
 
    * 4 egg yolks 
    * 3 Tablespoons lemon juice* 
    * 1 tsp lemon zest (grated lemon rind) 
    * 1 cup Splendaź 
    * 3 pkts Splendaź 
    * 1 pint heavy whipping cream 
 
Preheat oven to 275 F. Grease one Pyrex pie plate and set aside. 
 
Beat egg whites until foamy. Add cream of tartar; then beat until whites stand in peaks. Add Splenda and beat for an additional minute or two. Spread the meringue evenly in the bottom of the plate and up the sides. Bake 1 hour and 10 minutes in a 275 F oven, then raise the temperature to 300 F and bake for an additional 20 minutes. Remove from oven and cool while you make filling. 
 
Beat egg yolks well. Add 1 cup Splenda, juice and lemon zest. Cook in double boiler until thickened. Cool thoroughly. 
 
Whip whipping cream sweetened with 3 pkts Splenda. Gently fold cooled lemon mixture into whipped cream and spoon into cooled meringue pie shell. Chill thoroughly and serve. 
 
* To reduce carbs further, no-sugar lemonade dry mix disolved in 3 Tbsp water can be substituted for lemon juice.  or use Cadbury's lemon liquid. 
 
Serves 8.   5 grams per serving with lemon juice; 3 grams with substitute.

I made this recipe and was very skeptical at first when putting the ingredients together but it turned out quite well and pleased everyone I served it to. Give it a try.


Almond Flour Pound Cake
Just one word: Yummy!  


1 cup butter, at room temperature (I thought this could be reduced to 1 1/2 sticks as it's a bit greasy but still good.)
1 cup Splenda, bulk - not packets
5 eggs
1/3 cup sour cream
2 cups almond flour
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ginger
1/2 teaspoon allspice
1 teaspoon vanilla extract

Cream butter and Splenda well. Add eggs, one at a time beating after each addition.

Mix flour with baking powder and spices and add to egg mixture a little at a time wile beating. Add sour cream and vanilla extract.

Pour into a greased 8-inch cake pan and bake at 350 degrees F for 50 to 55 minutes
