Hello Everyone!
Long time no talk to! Things have been busy and crazy in my world!
I've been off the plan several weeks now but just started back up
again last Thursday. I quit smoking during the interim, thus the
increase in snackies and other foods that were not the best for me. I
didn't manage to gain any weight back, but I didn't lose any more
either. So, it's back on the wagon to feeling good and looking great!
Anyway, I'm really writing to give you guys the best fish recipe
ever!!! Even for those who don't like fish...it's all about the cedar
wraps!

Cedar Fish

4 Tilapia (or fish of your choice) Fillets
Salt/Pepper
Drizzle Olive Oil
Favorite Seasoning (Cajun, Lemon-pepper...)
Cedar Sheet Wraps (I found these at Whole Foods)
Grilled Veggies

This recipe is really easy if you have access to a Whole Foods, where
you can purchase already grilled veggies of your choice...zucchini,
eggplant, asparagus, & squash are what I used. If not you can grill
your own ahead of time.

Soak the Cedar Wraps in water for 10-15 minutes
Remove wraps and place seasoned fillet on each wrap
Top fish with the sliced grilled veggies
Tie up the cedar wraps with some cooking twine
Grill fish until nice and flaky.
Slide the fish & Veggies out of the cedar wrap and right on to your
plate. Enjoy!

And Boom! Now you have the tastiest smokiest fish ever. Get crazy
and mix up your seasonings and veggie toppings...even spread a bit of
pesto on top yummmmm!

The cedar wraps give the fish the best flavor ever!

Good luck to all!!!
Keep the recipes coming!
Michelle
