What I do most of the time is cook a nice dinner and make sure there's enough for leftovers. Then I pack the leftovers for lunch. I try to make dinner a healthy, balanced afffair. When I really get into it, my dinners include salads, veggies, a little meat, and so on. The nice thing about this is that lunch doesn't get boring day after day, and there's the added bonus that leftovers don't go to waste.
You can also toss in some yogurt or some fruit to make it different from the night before.
Anyway, this is what works for me. when I try to plan out lunches (lunch meats, sandwiches, cottage cheese, etc) it always goes to waste.
