Finally, could you recommend any books on histamine/histidine?

I would recommend that you read any of the books by Carl C. Pfeiffer, MD, PhD.
Amazon carries NUTRITION AND MENTAL ILLNESS: An Orthomolecular Approach to
Balancing Body Chemistry, in paperback for $10.36. Dr. Pfeiffer pioneered the
testing of blood histamine and urine pyrroles. I have loaned my book out, but
this book is easy to read and gives a cookbook list of supplements for each test
result (i.e., low or high histamine, urine pyrroles, etc.) Blood histamine can
change over time (witness your son's tests) and elevated histamine may be due to
allergies, etc. so needs to be monitored carefully. My daughter had low
histamine that required niacin for three years but her levels are now in the
low-normal range and doesn't require niacin anymore. I own several of his books
but ordered many of his books from library interloan.
