Tofu Stuffed Shells
15-20 large pasta shells
Boil, drain and cool.
2 tablespoons oil
1 onion, minced
2 cups sliced mushrooms
1/2 pound spinach, minced
Saute till onion is tender and spinach is reduced, about 5 minutes.
3/4 pound tofu
1 egg
4 tablespoons parsley
1/4 teaspoon salt
1/4 teaspoon pepper
Mash together. Stir in sauted ingredients. Stuff into cooled shells.
Place stuffed shells in 9x13" pan.
6 cups tomato sauce
Pour over shells.
1 pound mozzarella cheese, grated
Sprinkle over top. Bake 45 minutes till bubbly in 350 degree oven.
